Water Hyacinth is a limited crop in FarmVille 2 and is only available until November 13, 2016. The seeds can be bought in the General Store for 42 Coins after the player has reached Level 7.
The Water Hyacinth grows for 4 hours and is ready for harvesting after that. Each harvested Water Hyacinth can be sold for 81 Coins, used for Recipes such as 
Water Hyacinth Bouquet, 
Water Hyacinth Horse Medicine and 
Floating Water Hyacinth Bowl or crushed in the Feed Mill to make 6 Feed for the Animals.
